"Why does MS Outlook keep creating a second archive (.pst) file?!?!"
Turns out that although I removed the folder and deleted the associated pst from outlook, outlook still was set to auto-archive mail to the missing archive folder so it did the "smart" thing and just created it again.
To fix this:
- Right-click on any folder in your mailbox and select properties.
- In the new window select AutoArchive and then click the "Default Archive Settings..." button.
- In the following window under "Move old items to:", ensure that the file referenced is your old archive (.pst file). All I had to do was remove a "1" from "archive1.pst" at the end of the filepath.
There is indeed such a thing as being "too smart" for your user MS.
